Buttermilk Pancakes

Ingredients

  • 2-1/4 cup all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 egg
  • 1-1/4 cup buttermilk
  • 3 tablespoons cooking oil
  • 2 tablespoons sugar

Directions

Sift together flour, baking powder, baking soda, salt and sugar in one bowl
In another bowl beat egg and add buttermilk and cooking oil
Add liquid ingredients to dry and stir just until blended, batter will be a little bit lumpy
Heat skillet or griddle until a drop of water will dance about.
Pour batter, 1/4 cup, for each pancake, on hot skillet
Bake on one side until cake is full of bubbles that have not popped
Turn and bake the other side
Serve hot
If batter gets too thick, thin with a little water
