Pancake Muffins with Canadian Bacon

Ingredients

  • Cooking spray, I use butter flavored
  • 6 oz Canadian bacon, chopped and cooked
  • 2 cups high protein pancake mix, I use Kodiak, you can use any brand or even plan pancake mix
  • 1-1/2 cups water
  • 3 tablespoons maple syrup
  • 1-1/2 teaspoon vanilla extract

Directions

Preheat oven to 350 degree
Spray 12 hole muffin pan with cooking spray
Chop Canadian bacon into small pieces
Cook Canadian bacon in a skillet until lightly browned. Remove from heat and cool slightly
In a medium bowl, whisk together pancake mix, water, maple syrup and vanilla. Stir in Canadian bacon. Divide mixture evenly between muffin cups.
Back for 15 minutes or until a wooden pick inserted comes out clean.
Remove from muffin pan and cool on a wire rack
Store in airtight container in refrigerator.
Reheat in microwave or toaster oven

Notes: These are great for travel and a quick an easy breakfast to hold you until lunch.
You can freeze these and take out one at a time, defrost and warm in toaster oven or microwave.
You can use regular bacon as a substitute for Canadian bacon
