Chicken Bruschetta Bake

Ingredients
- 1 Box Stove Top, lower sodium, Chicken Stuffing Mix
- 1 can Petite Diced Tomatoes
- 3 oz Grated Mozzarella Cheese
- 3 cloves Minced garlic
- 1/2 cup water
- 1 teaspoon basil
- 1 teaspoon Italian seasoning
- 1-1/2 pounds chicken breast, boneless skinless (can use chicken thighs)
- Fresh ground pepper to taste
- 2 oz Asiago or Parmesan Cheese, grated
Directions
- Heat oven to 400 degrees
- Spray a 9 x 13 baking dish with cooking spray
- Mix tomatoes, stuffing mix, water, garlic and Italian seasoning until mix is moistened
- Coat chicken with basil and fresh ground pepper
- Place chicken in bottom of baking dish, then sprinkle mozzarella cheese over the top
- Top with stuffing mixture
- Bake 30 minutes or until heated through and chicken is done
- After chicken is done, sprinkle Asiago or Parmesan cheese on top
- Place on the top shelf and broil until cheese is melted and starting to brown
