Chicken Bruschetta Bake

Ingredients

  • 1 Box Stove Top, lower sodium, Chicken Stuffing Mix
  • 1 can Petite Diced Tomatoes
  • 3 oz Grated Mozzarella Cheese
  • 3 cloves Minced garlic
  • 1/2 cup water
  • 1 teaspoon basil
  • 1 teaspoon Italian seasoning
  • 1-1/2 pounds chicken breast, boneless skinless (can use chicken thighs)
  • Fresh ground pepper to taste
  • 2 oz Asiago or Parmesan Cheese, grated

Directions

  • Heat oven to 400 degrees
  • Spray a 9 x 13 baking dish with cooking spray
  • Mix tomatoes, stuffing mix, water, garlic and Italian seasoning until mix is moistened
  • Coat chicken with basil and fresh ground pepper
  • Place chicken in bottom of baking dish, then sprinkle mozzarella cheese over the top
  • Top with stuffing mixture
  • Bake 30 minutes or until heated through and chicken is done
  • After chicken is done, sprinkle Asiago or Parmesan cheese on top
  • Place on the top shelf and broil until cheese is melted and starting to brown
