Sauerkraut Salad

This was one of my grandmother’s favorite salads for holiday gatherings and for pot luck dinners. There was never any left as it was always a hit.

Ingredients

  • 2 cups sauerkraut
  • 1/2 cup sugar
  • 1/2 cup carrots, shredded
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, cut into thin strips
  • 1/2 cup celery, cut into thin slices

Directions

Snip sauerkraut strands into shorter lengths with scissors
Stir in sugar and let stand 1/2 hour.
Add remaining ingredients and stir well
Cover bowl tightly and chill at least 12 hours before serving
